Alexandre, tell us about your background and the family history of your inn?
After spending time in several starred restaurants, we decided to "land" and take over the family inn in Charlotte in 2012.
We offer a passionate cuisine where we favor short circuits and passionate local producers like us. In 2014, the inn entered the Bottin Gourmand and in 2015 we became "Maître restaurateur". In 2018, the inn won a Bib Gourmand. In 2019, opening of the new gourmet restaurant, a panoramic with a magnificent view of the Loire Valley and the juices.
The 158-year-old inn then became the “Le petit Pinatou” bistro where we offer family cuisine. In 2020, we are welcomed by the great family of the Toques d'Auvergne and we thank them.
How do you express your attachment to the territory?
The promotion of local products according to their season is our guideline. We attach great importance to product quality.
Being from the Haute-Loire, it is a source of pride to be able to put these products on the menu.
What dish or dessert on the restaurant menu best represents our region?
We love making a baba with green Puy lentil flour topped with a few Perles Rouges du Velay (local red fruits), all drizzled with a Yssingeaux verbena syrup.
Your chef's tip to share with our readers?
In summer, buy small, firm and slightly dry goats from our farmers or at the farmers' market, cut them into 6 pieces, pick wild thyme from the side of the paths and dip everything in a beautiful olive oil with a hint of pear alcohol liqueur from La Verturée d'Yssingeaux.

Your favorite spot when you're not in the kitchen?
We love going for a walk on the Madeleine plateau as a family with our three daughters, an exceptional view of the Loire Valley and the Vellaves volcanoes. A nice walk of an hour to do absolutely after a good meal at Pinatou!
